Ingredients

For the salad:

  • 1 large romaine lettuce, washed and torn into large pieces
  • 1 cup croutons
  • 1/2 cup grated or shaved Parmesan cheese

For the Caesar dressing:

  • 2 garlic cloves, minced
  • 4 anchovy fillets in oil, drained and minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 large egg (or 1 egg yolk)
  • 2 tablespoons fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
Preparation Steps
  1. Prepare the dressing:

    1. In a medium bowl, mash the garlic cloves with the anchovy fillets to form a paste.
    2. Add the Dijon mustard, Worcestershire sauce, lemon juice, and egg (or egg yolk). Mix well until all ingredients are well combined.
    3. While continuously whisking, start adding the olive oil in a slow and steady stream. Keep whisking until the dressing is emulsified and has a creamy consistency.
    4. Season with salt and pepper to taste. Adjust the amount of lemon juice or mustard according to your preference.
  2. Prepare the salad:

    1. In a large bowl, place the romaine lettuce pieces.
    2. Add the croutons and half of the Parmesan cheese.
