Step 0

Processing

The entire anchovy cleaning process is conducted manually, without the use of any machinery.

Step 1

STEP 1 (CURING)

The anchovies we process are salt-cured for at least 12 months in suitable containers.

Step 2

STEP 2 (MANUAL CLEANING)

We clean the anchovies by hand under running water, separating the two fillets and removing as much of the backbone as possible.

Step 3

STEP 3 (DRYING)

Once cleaned, the anchovies are left to drip and dried using special cloths.

Step 4

STEP 4 (PACKING)

The anchovies are packed by hand, one by one, to ensure the quality of our products.
